We live in an analogue world. All phenomena happen directly or indirectly in time domain.
Sensors measure events in these phenomena very accurately and almost instantaneously as a continuous function of time.

Computers live in a digital world. All peripherals that come after sensors in processing data measured are computer based. Hence the need to transfer from continuous (Analogue) to discrete (Digital) presents itself.
A device AD Converter (ADC) samples some discrete values at predetermined frequencies as shown below;

The continuous (Analogue) signal is represented with a green colored line while the discrete samples are indicated by the blue vertical lines.
In signal processing, sampling is the reduction of a continuous-time signal to a discrete-time signal. A common example is the conversion of a sound wave (a continuous signal) to a sequence of samples (a discrete-time signal).
A sample is a value or set of values at a point in time. A sampler is a subsystem or operation that extracts samples from a continuous signal. A theoretical ideal sampler produces samples equivalent to the instantaneous value of the continuous signal at the desired points.
Successful sampling process allows the accurate retrieval of the original signal from the sequence of samples obtained.
